Slather it on everything!
Chipotle Sauce can be used in a variety of ways. Use it as a dip for veg (or fries!), a spread for sammies and burgers, or as a topping for tacos, burritos, and grilled meats.
What you’ll need for your Chipotle Sauce
- Mayo (or sour cream is yum)
- Chipotle pepper in adobo sauceÂ
- Garlic and lime (zest and juice)
- Cilantro stems, yes, the stems
- Food processor, mini-food processor or blender
I know, I should have called it Chipotle Mayo, but there are just so many mayo haters out there, I didn’t want to scare you away, so here me out. Feel free to substitute sour cream for the mayo. Perfectly acceptable and perfectly delicious as well.Â
Not a fan of spice? Adjust the chipotle, and taste and add as you go.Â
Can we talk cilantro for a hot sec?
Okay, I know many of you have that ‘it tastes like soap’ gene (4-14% of you have the gene!), so you can sub in parsley or fresh basil if you’d like. But if you ARE using cilantro, use the stems. They have a ton of flavor, more than the leaves. Keep that in your cooking back pocket. In many countries, the stems and roots are the primo part of this herb.Â

Description
So easy, so delish. This Chipotle Sauce will live in your repertoire for years to come. The uses are endless, even on cardboard. 😄
Ingredients
- 1 small garlic clove, crushed
- 3 tablespoons cilantro stems, chopped
- 1 tablespoon (from a can) chipotle in adobo sauce, chopped (see video on how to store canned chipotles)
- Zest and juice of one lime
- 1 cup mayonnaise
- Pinch of kosher salt (affiliate link) and fresh cracked black pepper
- 1 scallion, minced for garnish
Instructions
- Add the garlic and cilantro stems, to mini (or regular) food processor (affiliate link), blitz until minced.
- Add the remaining ingredients whiz until combined. Give it a taste, add a pinch of salt and pepper if needed.
- Cover and refrigerate in a container, jar or bowl until ready to use.
Slather it on everything!
